‘My word, it’s beautiful. It’s another dazzling 16th-century coaching inn (like the Burford Bull and many others), but here they’ve gone for a pared-back, minimalist approach to the site, which sets off its venerability all the better. It’s all about grey stone, old and new wood, white plaster, cast iron railings, beams, flagstones, leather, ancient staircases spiralling down to mysterious cellars… You’re never quite sure what’s old and what’s new; you’re just kind of in love.’
