Produce

Reforming our food system to foster a symbiotic relationship between pubs and farming.

The French have their brasseries, the Italians their trattorias; we have our pubs. Our mission is to reconnect pubs back to UK farmers and food producers.

There are approx. 38,000 pubs in the UK, this carries a lot of purchasing power. Pubs can be key players in creating a mindful food system within the UK. Using British forward-thinking farms and producers we can reduce the impact on our environment and strengthen the British food economy by promoting the use of fresh, seasonal produce. We aim to have a direct-from-source supply chain with these farmers and producers.

Our market garden at Bruern Farms serves as a primary vegetable supplier into our pubs. The farm is managed by our head grower Thomas who believes in a holistic way of managing the soil.

The market garden also serves as a source of inspiration for the chefs when developing menus and dishes. Each member of our team has the opportunity to visit the farm to learn and assist with harvesting the produce so that they learn how food is grown, giving an incredible insight into the growing process, and connecting the different parts of the supply chain.

One of the benefits of having a dedicated farm supplying produce to the pub is that the produce will have minimal travel time; it can be harvested and get to the pub on the same day. The produce will last longer, taste better and be more nutritious.
